TAMALE PRODUCT INFORMATION TAMALE HANDLING
Tamales are made with all fresh ingredients, packaged by the dozen, and delivered hot and ready to eat.
Tamales that are NOT packed tightly in an insulated container like a cooler should be consumed or refrigerated within 2 hours of delivery or 1 hour in temperatures above 90 degrees.
FDA food safety guidelines say that hot food needs to be kept at 140 degrees or above. See https://www.fda.gov/food/buy-store-serve-safefood/handling-food-safely-while-eating-outdoors for more information.
Refrigerate for up to 5 days after the day of delivery. After that, they should be frozen.
Do NOT put HOT tamales in the freezer. They should be spread out and cooled in the refrigerator prior to freezing.
TAMALE HEATING
Best – Steam them using a tamale or vegetable steamer until the internal temperature reaches 140 degrees Fahrenheit. It typically takes 10 – 15 minutes after the water boils.
Good – Reheat in the microwave on high heat, preferably covered with a wet paper towel, for about 2 minutes. Repeat for 1-minute intervals until internal temperature reaches 140 degrees Fahrenheit.
Cooking time varies by volume cooked and cooking appliance. Extend the cooking times if tamales are frozen.
SALSA HANDLING
Salsa should be refrigerated after opening for up to 7 days.
After 7 days, salsa should be consumed or can be frozen.
Salsa can also be used as a sauce to cook with your favorite recipes.
